Soft Walnut Cheese: Vegan Appetizer Recipe - Sweet and Sour

Soft cheese with walnuts is a very simple appetizer to prepare, perfect for vegetarian and vegan guests.

Ingredients · Servings 4
  • 100 ml soy milk
  • 20 g Corn starch
  • 125 g soy yogurt
  • 50 g Soy cream
  • 55 g Shelled nuts
  • 2 cucchiaini Agar agar
  • Sale q.b.
  • 25 ml Coconut oil
  • 2 tablespoons brewer's yeast
Method · 3 h 15 min
  1. Pour the cold milk into a saucepan, add the cream and yogurt. Using a whisk, stir vigorously until the mixture is smooth and free of lumps. Bring to a boil, being careful not to let it burn.
  2. Meanwhile, dissolve the agar agar in a glass with a couple of inches of water. Pour it into the saucepan over the heat and continue whisking.
  3. Place the cornstarch in another glass, add the coconut oil and start mixing well until you obtain a creamy mixture.
  4. Pour it into the saucepan, whisk, and let the cream simmer. Meanwhile, chop the walnuts, leaving a few whole kernels for garnish.
  5. Add the nutritional yeast and chopped walnuts, and continue stirring. Season with pepper and salt. Boil for ten minutes, then turn off the heat and let it thicken for a few minutes.
  6. Pour a drizzle of oil into a circular container and brush it well with a silicone brush. Pour the cream into the container and refrigerate. Once the cheesecake has solidified, invert it onto a plate and garnish with the whole walnut kernels you set aside.

Walnuts are rich in minerals, zinc, calcium, and magnesium. They're also a source of vitamin E and folic acid, and are helpful in combating stress. You can serve your soft walnut cheese as an appetizer or, in larger portions, as a main course.
