Santiago Lastra's long awaited KOL sets opening date

We first heard about Santiago Lastra’s debut restaurant KOL over a year ago, so we’re pleased to hear that the team has finally announced an opening date. The long-awaited Kol will welcome the first diners to its Marylebone site on October 20.

“It was a huge knockback when the restaurant was unable to open in May, but we spent time further refining, researching and fully immersing ourselves in the KOL vision”

Lastra, who grew up in Mexico City and was behind Noma Mexico’s launch, moved to London three years ago and completed a series of successful residencies since then. With his first permanent site, Lastra hopes to showcase Mexico’s cuisine and multi-layered culture using British produce.

The 56-cover dining room on Seymour Street will offer two set menus, with the choice of either five or six courses. The wine list will showcase biodynamic wines sourced from central and Eastern Europe, with cocktails by mixologist Marcis Delzainis also on offer.

Designed by A-NRD studio, the interiors reflect the colours of rural Mexican landscapes, villages and homes where Santiago grew up. Meanwhile, a 20-cover dining room come chefs table will feature on the ground floor.

“It was a huge knockback when the restaurant was unable to open in May, but we spent time further refining, researching and fully immersing ourselves in the KOL vision” says Lastra. “I believe that the opening of KOL at this time can bring a little hope to the hospitality sector.”
