Mixture on toast

The mixture on toast is a quick and hearty meal with chicken and turkey and a good portion of vegetables. Three types of peppers, eggplant and spring onions add variety to the mixture, while chili provides a slightly spicy taste. It tastes best on crispy toast.

Ingredients · Servings 1 dose
  • 300 g chicken breast
  • 300 g turkey breast
  • 1 green pepper
  • 1 red pepper
  • 1 yellow pepper
  • 1 small eggplant
  • 1 tomato
  • 1 small chili pepper
  • 5 spring onions
  • 50 g butter
  • 1 tablespoon olive oil
  • 1 teaspoon sweet ground paprika
  • 1 teaspoon potato starch
  • 2 tablespoons water
  • 8 slices of toast bread
  • salt
Method · 35 min
  1. Dry the chicken and turkey and cut them into small cubes. Wash the vegetables. Remove the seeds from the peppers and cut them into cubes, also cut the eggplant and tomato into cubes. Finely chop the chili pepper and cut the spring onions into rings.
  2. Toast the bread dry in a toaster or on a baking sheet in an oven preheated to 200 °C.
  3. Melt the butter in a pan, add the olive oil, sweet ground pepper and chopped meat. Stir and fry vigorously for about 7 minutes.
  4. Add the peppers, eggplant, tomato, chili pepper and spring onions, season with salt and stir. Cover the pan and simmer the mixture for about 5 minutes.
  5. Mix the potato starch in the water. Uncover the pan, stir the starch mixture into the meat and vegetables and cook, stirring occasionally, for about 3 minutes, until the mixture thickens slightly.
  6. Divide the finished mixture among toasted bread and serve immediately.
