How to bake Honza's buns

Discover the proven recipe for Honza's buns, which remain incredibly soft, tender and fragrant even several days after baking.

  • To make about 30 buns you will need the following ingredients:
  • Add 1 teaspoon of powdered sugar to lukewarm milk, crumble the yeast, mix and let the yeast rise in a warm place for 10–15 minutes.
  • Sift the semi-coarse flour into a bowl with the salt, remaining powdered sugar and vanilla sugar. Add the egg yolks, the risen yeast and most of the remaining lukewarm milk to the flour. Start kneading the dough, adding more milk as needed to achieve the desired consistency.
  • Next, add the softened butter and knead thoroughly into a smooth, elastic dough. Once kneaded, cover with a towel and leave to rise in a warm place for 30–40 minutes.
  • Knead the risen dough briefly and roll it out on a lightly floured rolling pin into a sheet about 1 cm thick. Cut the sheet into 30 pieces. Place about a tablespoon of jam in the middle of each piece, bring the edges of the dough together over the filling and shape into a bun.
  • Place the buns seam side down in the baking dish and brush the melted butter on the surface and between each piece. Cover the buns and let them rise for another 15–25 minutes.
  • Towards the end of the rising process, preheat the oven to 190°C. Place the buns in the preheated oven and bake for approximately 20–25 minutes until golden brown.
  • Let the baked buns cool slightly, sprinkle with powdered sugar and serve.
