When looking for a quick dinner idea, canned sardines can easily be overlooked. Yet, they can be used to prepare much more than just a simple sandwich or a last-minute salad. On Instagram, content creator Ame Moreno shares a recipe that offers a refreshing change from the usual dishes.

She suggests transforming sardines into small, golden-brown pancakes using ingredients easily found in your cupboards or at the supermarket. With two eggs, a little breadcrumbs, herbs, paprika, and a few other seasonings, the sardines take on a whole new form.

The result is both simple to prepare and delicious enough to offer a welcome change from the usual fish recipes. To accompany these patties, the culinary expert opts for a refreshing sauce made with Greek yogurt, lemon, honey, and chipotle pepper in an adobo sauce.

For the sardine burgers:

  • 500g of sardines in tomato sauce, drained
  • 2 eggs
  • 2 tablespoons of light mayonnaise
  • 1 teaspoon of Dijon mustard
  • 2 tablespoons of chopped chives
  • 2 tablespoons of chopped parsley
  • ½ teaspoon of sweet paprika
  • Black pepper, according to taste.

For the sauce:

  • Approximately 180g of Greek yogurt.
  • 1 chipotle chili in adobo sauce (optional)
  • The juice of half a lemon, as needed.
  • 1 teaspoon of honey

The procedure to follow:

Start by removing the sardines from their tomato sauce and letting them drain thoroughly. Place them in a bowl and roughly mash them with a fork. Stir in the finely chopped chives and parsley. Sprinkle the mixture with breadcrumbs, then season with paprika and a few turns of freshly ground pepper. Crack the eggs into a separate bowl.

Add the mayonnaise, Dijon mustard, and the juice of half a lemon, then whisk until smooth. Transfer this mixture to the bowl containing the sardines. Mix with a spoon until all the ingredients are well combined and the texture is easily shaped. Take a portion of the mixture and flatten it between your hands to form a small patty.

Repeat until all the mixture is used up, then refrigerate the burgers for about ten minutes. This chilling will firm them up before cooking. Use this time to prepare the side dish. Combine the Greek yogurt, chipotle pepper in adobo sauce, lemon juice, and honey in a bowl. Season with salt and pepper, then stir until you have a smooth sauce.

Finally, place the burgers in a hot pan with a little oil. Cover and let them brown gently on the first side before carefully flipping them. Continue cooking until both sides are golden brown. Serve the burgers immediately with the yogurt and chipotle chili adobo sauce.
