Puttanesca with recycling, even better than the classic recipe, more than seconds, they even cleaned the plate

Puttanesca with recycling, even better than the classic recipe, more than seconds, they even cleaned the plate

A super good pasta and I don't throw anything away.

I cooked too much pasta, so I left a portion of spaghetti unused, and I need to find a way to use it. Tired of the usual frittata for using up the pasta, I decided to make a sauce based on the classic recipe for spaghetti alla puttanesca.

All you need to do is add a few cherry tomatoes, a few anchovies, a few capers, and a few black olives to create a truly special sauce and bring a dish to the table that tastes like freshly made pasta.

A super quick lunch without wasting anything, making a sauce in 15 minutes total. We didn't even have time to put the pasta in because we already cooked it.

Ingredients

300 g of leftover spaghetti

Peeled tomatoes, 400 g

A clove of garlic

Three anchovy fillets in oil

Olive green

Capers

Sale

Olive oil

Chili

Parsley

Let's proceed directly with the sauce preparation, to which we'll then add the pasta and sauté everything in the pan. Take a nonstick pan and add a few drizzles of oil, sautéing the garlic clove and a little chili pepper.

At this point, add the anchovy fillets, which will melt perfectly, and the capers, cooking for about a couple of minutes. Pour the peeled tomatoes into the pan, crush them, and season with salt to taste. Cook for five or six minutes. At this point, our sauce will be almost ready, so add it and let it cook for a few more minutes. It's time to add the pasta, so take the spaghetti we reserved and add it to the pan, adding a sprinkling of chopped parsley and tossing everything together. Serve this pasta puttanesca with a twist, as if it were truly freshly made.
