Try a different way to make gnocchi: instead of boiling them, bake them in a remoska. Potatoes and flour create a dish with a crispy crust and a soft center. The process is simple and the remoska does most of the work for you. Enjoy a classic dish.

Dumplings, or strupacky, are a Slovak national dish made from grated potatoes and flour. They are shaped like small dumplings that are scraped into boiling water from a cutting board or pushed through a special dumpling strainer – a dumpling maker. After a short cooking time, you can season them according to tradition and serve them immediately – unless you use the version in which the dumplings are baked. A small remoska oven can also provide this service.

How to prepare dough for gnocchi or strudel

To prepare, simply grate raw potatoes on the sharpest side of the grater. Do not pour out the water – it contains starch, which serves as a binder for the dough. If you use an egg to bind the dumplings, they will be harder. You also need plain or semi-coarse flour and salt. Just enough flour to make a thick dough. Try dropping one potato into salted boiling water. If it stays together, you can start pushing the dumplings through. If it falls apart, you need to add flour or an egg, because the potatoes did not have enough starch to bind the dough together. When the dumplings rise to the surface, they are cooked. Remove them with a slotted spoon.

How to season and cook gnocchi

Try improvising and make halushi dumplings special with something special:

  • The dumplings include sauerkraut or brynza cheese, softened with sour cream.
  • They are perfect with toasted smoked bacon, cracklings, English bacon or smoked meat.
  • Don't forget the sautéed onion, cut into cubes or rings.
  • Season the dumplings with salt and pepper and sprinkle with green chives on a plate.
