  • 300 g Butter
  • 25 g Invert sugar
  • 1 g Sale
  • 5 g Lime zest
  • 185 g Whole eggs
  • 180 g Egg yolk
  • 50 g Almond flour
  • 250 g flour
  • 100 g Potato starch
  • 8 g Instant yeast
  • 125g Yogurt
  • 250 g diced peaches in syrup

  1. In a stand mixer, beat the granulated sugar with 250 g of softened butter and the inverted sugar until you obtain a smooth and frothy cream.
  2. Add the salt and grated lime zest, continuing to whisk.
  3. Add the whole eggs, a little at a time, always beating with the whisk.
  4. Add the egg yolks and mix well.
  5. Sift together the flour, almond flour, potato starch, and baking powder, then add to the mixture and mix thoroughly.
  6. Add the yogurt and mix until you get a smooth dough.
  7. Dust the peach cubes with a little flour, add them to the mixture and mix gently.
  8. Pour the mixture into a lined or buttered plumcake mold, then transfer it to the refrigerator for 4 hours or overnight.
