Recipe for pear Belle-Hélène served in a glass

Ingredients · Servings 4
  • 4 pears
  • 2 glasses of water
  • 2 sachets of vanilla sugar
  • 2 egg yolks
  • 40 g de sucre
  • 40 g cornstarch
  • 200 ml of boiling milk
  • chocolate sauce
Method · 16 min
  1. Peel the 4 pears, place them in a dish, add 2 glasses of water and 2 packets of vanilla sugar. Cover and microwave for 6 minutes. Cool and drain.
  2. In a bowl, whisk 2 egg yolks with 40g of sugar until the mixture turns white.
  3. Next, add 40g of cornflour. Gradually pour 200ml of boiling milk, flavored with vanilla, over this mixture.
  4. Thicken the mixture over low heat, stirring constantly.
  5. Pour the cream into the verrines, place a pear in each one, and don't forget the hot chocolate coulis.
