Recipe for chicken liver salad and sautéed potatoes

Peel the potatoes and cut them into small cubes. Fry them in a pan over high heat with a tablespoon of oil, stirring regularly.

  • 300g of poultry livers
  • 1/2 green salad
  • 2 medium-sized potatoes
  • 2 tomatoes
  • 1 shallot
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of sunflower oil
  • 2 tablespoons of pine nuts
  • For the vinaigrette
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of mustard
  • 3 tablespoons of olive oil
  • salt and pepper
Method · 15 min
  1. Peel the potatoes and cut them into small cubes. Fry them in a pan over high heat with a tablespoon of oil, stirring regularly.
  2. Meanwhile, dry-roast the pine nuts in a saucepan over high heat for a few minutes. Set aside.
  3. Peel and finely chop the shallot. Sauté it in the pan for a few minutes. Then add the chicken livers and mix.
  4. When the livers are cooked and the shallot is soft, add the tablespoon of balsamic vinegar and deglaze. Cook for 2 to 3 minutes. Add the potatoes and keep warm.
  5. Prepare the vinaigrette in a salad bowl, mix together the mustard, vinegar and oil, season with salt and pepper.
  6. Add the salad and toss to combine. Divide the salad between two plates. Slice the tomatoes and arrange them around the salad on the plates.
  7. Add the pan-fried chicken livers and potatoes. Sprinkle with pine nuts and serve immediately.
