This fish stick trick is loved by children and adults alike

These fish finger toasts taste just like the popular fish burger from a major fast-food chain. This trick makes them super easy to prepare, saves you a trip to the bakery, and is cheaper too!

Ingredients · Servings 6 pieces
  • 6 slices of toast
  • 6 slices of cheese (e.g. Cheddar)
  • 15 fish fingers
  • Lemon wedges for serving
  • 2 gherkins
  • 100 g Mayonnaise
  • 3 tablespoons of yogurt
  • 1 tsp mustard
  • Salt, pepper, sugar
  • 2 sprigs of parsley
  • 1 small red onion
Method · 20 min
  1. Place slices of toast on a baking sheet lined with parchment paper. Top each slice with cheese and 2-3 frozen fish fingers. Bake in a preheated oven (220°C/425°F, conventional oven setting) for about 15 minutes, until the fish fingers are golden brown and crispy.
  2. Meanwhile, for the remoulade, finely chop the gherkins and mix them in a bowl with the mayonnaise, yogurt, 1 tablespoon of gherkin brine, and mustard. Wash the parsley, pluck the leaves from the stems, chop them finely, and stir them in. Season with salt, pepper, and a pinch of sugar. Finely dice the onion.
  3. Spread some remoulade on the fish finger toasts, sprinkle with onions and serve with lemon wedges.

You might be wondering why the frozen fish fingers are placed directly onto the toast. That's not a mistake, but rather the very trick that makes this recipe so incredibly easy! Adults especially appreciate how quick and simple the preparation couldn't be. Children love it because they get to help out – and fish fingers are always a hit with little ones anyway.
