Apple dough muffins
Apple dough muffins are made with grated apples, cocoa, raisins and cinnamon, which give the dough a natural sweetness and softness. The surface of the muffins can be sprinkled with fruit or nuts or decorated with Nutella before baking. Muffins are loved not only by children, but also by adults.
Ingredients · Servings 1 dose
- For the dough:
- 1-2 apples (depending on size)
- 200 g semi-coarse flour
- 200 g powdered sugar
- 170ml oil
- 2 eggs
- 2 tablespoons cocoa
- 1 handful of raisins
- 1/2 teaspoon ground cinnamon (or to taste)
- 1 baking powder
- For decoration:
- small fruits (blueberries, currants)
- Nutella
- nuts
Method · 50 min
- Line the muffin tin with paper cups.
- Peel the apples, core them and grate them on a coarse grater. Add 200 g to the dough.
- Preheat the oven to 180 °C.
- Mix the flour with baking powder, cocoa and cinnamon.
- Separate the eggs into whites and yolks. Beat the whites until stiff peaks form.
- Beat the egg yolks with the sugar until foamy and add the oil at the lowest speed.
- Gradually add the flour mixture, raisins and grated apples to the egg yolk foam. Finally, gently fold in the egg whites.
- Fill the muffin cups with batter about 3/4 of their volume. You can sprinkle small fruits, roughly chopped nuts or add a spoonful of Nutella on top. This will give each muffin an original taste and appearance.
- Bake in the preheated oven until golden brown, about 20 minutes. Check the doneness with a skewer. Insert it into the dough and if it comes out dry and clean, it's done.
- Let the baked muffins cool briefly in the tin. Remove from the tin and let cool completely on a wire rack.
- Serve alone or with whipped cream.
