These savory muffins with broad beans and pecorino cheese are perfect for an outdoor lunch or a snack: they're ready in just a few steps.

Ingredients · Servings 4
  • 100 g fresh shelled broad beans
  • 150 g fresh Pecorino cheese
  • 80 g grated mature Pecorino cheese
  • 300 g Type 00 flour
  • 200 ml Latte
  • 2 eggs
  • 5 g Sale
  • 16 g Instant yeast for savory pies
  • Pepe q.b.
Method · 40 min
  1. Combine all the dry ingredients in a bowl: mix the flour, salt, baking powder, pepper, and grated pecorino cheese.
  2. Add the shelled fava beans and diced pecorino. Pour in the milk and eggs, lightly beaten, and stir. Season with salt. Pour the mixture into muffin or mini muffin molds and bake at 190°C for 20 minutes.

Savory muffins with fava beans and pecorino cheese are perfect for an outdoor lunch. Savory muffins are perhaps more popular than sweet ones due to their versatility and the perfect choice for buffets, appetizers, and picnics. These muffins with fava beans and pecorino cheese are a celebration of spring and its seasonal ingredients. To make them even more appetizing, you can add salami or spicy salami, cooked ham, or pancetta. Wheat flour can be mixed with other flours for a bolder flavor: corn flour, whole wheat flour, or other flours. Fava beans have a slightly bitter flavor, and to sweeten them, you can peel the skins or blanch them before cooking. If you don't like fava beans, use peas, even frozen ones.
