  • 1 stale white roll, e.g. Kaiser roll
  • 3 bay leaves
  • 3 allspice grains

  • 1 flat teaspoon of hot paprika
  • 1 teaspoon sweet paprika

  1. To prepare the poultry pâté, begin by chopping the meat into small pieces. Place it in a pot along with the giblets, cover with water, and add bay leaves and allspice. Cover and simmer over low heat. Peel and dice the vegetables (celery, carrots, parsley, onion), and add them to the simmering meat. Press the garlic cloves through a garlic press and add them to the pot. Season with salt and pepper. Cover and simmer for about an hour (all ingredients should be submerged in water).
  2. Before the end of cooking, add stale bread and wait until it softens. Pour off the broth into a separate container (you can use it later to make soup). Run the meat and vegetables through a food processor.
  3. Crack 4 eggs into the bowl with the ground meat, add the sweet and hot paprika, lovage, and season with salt and pepper. Mix all ingredients thoroughly using your hands.
  4. Grease the loaf pans with butter and dust with breadcrumbs. Transfer the meat to the pan. Bake the pâté in an oven preheated to 170 degrees Celsius (350 degrees Fahrenheit) for just over an hour.
