Fluffy pancakes

Pancakes bring back memories of spending time with our grandmothers during the holidays. Our grandmothers knew how to make pancakes 100 different ways. Sometimes they grated an apple into the batter and then coated the pancakes in cinnamon sugar, sometimes they just spread jam on them.

Ingredients · Servings 1
  • 1 cup plain flour
  • 1/2 teaspoon baking powder
  • 1/2 cup milk
  • 2 teaspoons oil
  • 1 tablespoon sugar
  • 1 egg
  • 1 pinch of salt
Method · 30 min
  1. Separate the yolk from the white and beat until stiff.
  2. Mix the egg yolk and sugar in the milk. Gradually stir the flour and baking powder into the milk (if the batter is too thick, add a little milk, but the batter should not be thin like for pancakes) and add the oil.
  3. Finally, carefully fold the egg whites into the batter.
  4. Fry the pancakes until golden brown and dry, so that they have a beautifully smooth surface.
