Grape foam bowl with creamy skyr and toasted oat flakes

Grape foam bowl with creamy skyr and toasted oat flakes

Sometimes, mornings call for a little creative variety beyond the usual muesli routine. A spontaneous experiment with an immersion blender and freshly squeezed red grape juice led to a real discovery. Whisking the juice creates a delicate pink foam that looks almost like a cloud.

Ingredients · Servings 2
  • 400 ml red grape juice (freshly squeezed)
  • 100g of tender rolled oats
  • 1 tbsp Coconut oil
  • 1 pinch of cinnamon
  • 200 g Sugar
  • 1 TL Vanilleextrakt
  • 2 The Honey
  • 100 g blue grapes (halved)
  • 2 tbsp chopped walnuts
Method · 20 min
  1. Squeeze fresh red grapes and prepare 400 ml of grape juice. Pour the grape juice into a tall glass or bowl and whisk it with an immersion blender until a light foam forms.
  2. Toast the rolled oats in a dry pan over medium heat until golden brown and fragrant. Add coconut oil and a pinch of cinnamon, stir well, and let the mixture cool briefly.
  3. Mix skyr with vanilla extract and honey in a bowl until a creamy, smooth mixture is formed.
  4. Divide the spiced skyr cream between two bowls as a base. Spoon the frothed grape juice over it.
  5. Sprinkle the toasted oats over the bowls and place halved blue grapes on top. Sprinkle everything with chopped walnuts.

Here's how to make a delicious grape foam breakfast bowl

The heart of this recipe is the red grape juice. Ideally, use freshly squeezed juice. As soon as you vigorously blend the juice with an immersion blender, the liquid incorporates air and transforms into a light foam. This works best in a tall, narrow container to prevent splashing and allow the volume to build up nicely. The red juice provides an intense, natural sweetness and gives the bowl a beautiful purple hue. If you don't have your own juicer, simply use a high-quality, not-from-concentrate juice from the refrigerated section. Make sure that no additional sugar has been added, as the fruit is naturally sweet enough.

The base is Skyr, a traditional Icelandic yogurt that has become a breakfast staple in recent years. It's characterized by its high protein content and a particularly firm, almost quark-like texture. This density makes it the ideal base, as the delicate grape foam won't immediately sink in. To make the base smooth, stir the Skyr with a little vanilla extract and a spoonful of honey. The vanilla adds a warm, soft aroma that harmonizes perfectly with the fruitiness of the grapes. You decide how sweet you like your breakfast. You can always reduce the amount of honey or omit it entirely if the fruit's sweetness is sufficient for you.

A good breakfast thrives on the contrast of textures. That's why you'll prepare a quick, warm topping of rolled oats. Put the oats in a pan and toast them over medium heat. Stirring constantly is important, as they can burn quickly. As soon as they start to smell fragrant, add a little coconut oil and a pinch of cinnamon. The oil gives them a delicate toasting, and the cinnamon fills your kitchen with a wonderful aroma. Just before serving, sprinkle this warm, crunchy mixture over the cool skyr cream and foam. Finally, scatter halved blue grapes and coarsely chopped walnuts on top. The nuts add an earthy flavor that balances the sweetness. Thanks to its appealing layering, this dish is not only perfect for everyday meals but will also make a real impression at a leisurely brunch with guests.
