Baci di dama are extraordinary! Made with just five ingredients, all affordable and readily available in every kitchen, they're such a delicious treat that you'll only stop eating them when they're gone.
Strikingly simple, they're perfect for a snack for kids, but also ideal for a 5pm break with friends over a nice cup of steaming tea.

Rest: a few hours
Cooking: oven, 140° for 15-17 minutes.

a planetary mixer with a K hook
cling film
150 g of skinless almonds
a glass of cake flour
half a 300g block of butter
10 tablespoons of granulated sugar
hazelnut spread to taste
Lady's Kisses, procedure
Blend half the sugar with the cooled almonds, browning them in the oven at 180°C (350°F) for a few minutes. Transfer the resulting fine, even flour to a stand mixer fitted with a hook attachment and mix it on low speed with the flour, butter, and the remaining sugar.
Shape the smooth mixture into a loaf and refrigerate for 2 hours, wrapped in plastic wrap. Then, shape the mixture into an even number of 1 cm diameter balls, and refrigerate for 1 hour. After this time, bake the cookies at 140°C (280°F) for 15-17 minutes. Once cooked, remove them from the oven and let them cool before joining them together in pairs using the hazelnut spread. Serve.
