If you're struggling to tempt your family after dinner, this is the perfect recipe. Just a few simple ingredients for a mouth-watering result. The preparation involves three steps: first, the ricotta and lemon cream, then the crepes, and finally, the cooking.

This recipe was born from the idea of ​​tempting my family after dinner. They often ask for dessert after dinner, and I love surprising them every time. This time, I have to say, I've outdone myself. Try my recipe too.

You can also make these crepes for Sunday dessert or if you're inviting friends over and don't know how to impress them.

For the crepes

  • 2 eggs
  • 300 ml of milk
  • 120 g of 00 flour
  • cooking oil to taste

For the cream

  • 200 ml of whole milk
  • 150 g of ricotta
  • 80 g of sugar
  • 25 g of corn starch
  • 15 ml lemon juice
  • grated peel of an untreated lemon

How to make crepes filled with ricotta and lemon cream

To make these crepes, start with the ricotta and lemon cream. Drain the ricotta in a sieve. Wash the lemon, remove the zest, and squeeze out the juice. Strain and set aside.

Take a small saucepan and combine the cornstarch and sugar, then slowly pour in the milk and heat thoroughly. Add the lemon juice and grated zest. Stir until thickened, and then turn off the heat. Remove the cream from the saucepan and place it in a bowl, stirring constantly with the ricotta.

Using bottom-up movements, once the mixture is finished, we can make the crepes. Sift the flour and place it in a bowl. Add the milk, eggs, and sugar, and mix quickly to avoid lumps.

Cover the bowl with plastic wrap and refrigerate for half an hour. Heat a nonstick pan, oil it, and heat. Pour in a ladleful of batter and cook, flipping the crepe after a few minutes. Once cooked, remove it from the pan and place it on a plate, then continue cooking the remaining crepes. Once the crepes are cooked, fill them with the ricotta cream. Serve the crepes with the ricotta cream, fresh fruit, and a sprinkle of powdered sugar.
