Puff pastry is a basic preparation used for desserts and rustic pies: the process is complex, follow our recipe.

Ingredients · Servings 4
  • 200 g 00 flour
  • 200 g very cold butter
  • 100 g Ice water
  • 1 teaspoon salt
Method · 1 h 15 min
  1. Place the flour, cubed cold butter, and salt in a large bowl. Work quickly with your fingertips until the mixture becomes coarse.
  2. Add the ice water a little at a time and mix quickly until a rough dough forms. Compact it without overworking it, shape it into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for 20 minutes.
  3. Transfer the dough to a lightly floured surface and roll it out with a rolling pin into a rectangle approximately 20x40 cm.
  4. Fold the bottom flap of the rectangle to the center, then overlap the top flap, aligning them. Fold in half again: you've created the first four-fold fold.
  5. Rotate the dough 90° and repeat the rolling and folding as described above, obtaining the second four-fold.
  6. Mark the dough with two footprints as a reminder, wrap it in plastic wrap, and refrigerate for 20 minutes. Repeat the folding sequence until you have a total of four folds of four, always respecting the resting times in the refrigerator.
  7. For a more aromatic version, you can add a pinch of sugar to the dough if you're making sweet recipes. Alternatively, for a more flavorful savory pastry, you can slightly increase the salt or use a small amount of whole wheat flour, keeping in mind that the layering will be slightly less pronounced.
