Thin pancakes with kefir and holes

To make thin, holey kefir pancakes, we'll need the following ingredients.

In a large bowl, whisk the eggs and salt together, then pour in the boiling water, whisking constantly. Whisk vigorously until the mixture is smooth.

Now let's pour in the kefir.

Add baking soda and sugar. Stir the dough. Bubbles will appear on the surface of the dough – this is the kefir reacting with the baking soda.

Pour in any vegetable oil, I used refined olive oil, it’s better if the oil is odorless.

Gradually add flour and mix the dough thoroughly with a whisk to avoid lumps.

In the end, we should have pancake batter that looks like this. Let it rest for ten to twenty minutes.

Place the frying pan over high heat, grease the surface of the pan with vegetable oil, pour a small portion of the batter into the pan, and rotate the pan in a circular motion so that the batter is evenly distributed over the surface of the pan.

As soon as bubbles appear on the surface of the pancake and a brown border appears around the edges of the pancake, turn the pancake over to the other side.

Bake the pancakes on both sides until golden brown. Cook the next pancake without greasing the pan.

Serve the finished pancakes hot with your favorite jams, honey, butter, or sour cream. I serve thin, holey pancakes (made with kefir) with orange jelly.
