  • 125g of unsalted butter
  • 1 egg + 1 egg yolk
  • 1 teaspoon baking powder
  • 200g of flour
  • 75g of ground hazelnuts
  • 2 egg whites
  • 2 tablespoons of lemon juice
  • 2 tablespoons of orange blossom water or rose water
  • Icing sugar

Method · 55 min
  1. Preheat your oven to 150°C.
  2. Mix the flan with the lemon juice or flavoring.
  3. Add the softened butter and mix everything together well. Then, add 1 whole egg and 1 egg yolk.
  4. Add the baking powder, then the flour and the hazelnut alternately, continuing to mix until you obtain a firm but malleable dough.
  5. Roll out the dough and cut out the desired shapes.
  6. Place in the oven. Note that this dough requires baking at a low temperature for approximately 40 minutes. Let them cool completely.
  7. Prepare the icing with the ingredients listed above; it should not be runny or too thick. Always test it on a cake and adjust by adding icing sugar until you get the desired texture.
