Cucumber sandwich for afternoon tea
Recipe for finger sandwiches with cucumber and cream cheese, seasoned with lemon zest, salt, freshly ground pepper and a bit of fresh dill.
Cucumber sandwiches are one of the most classic sandwiches for afternoon tea and they taste really good. Simple and delicious!
I use homemade sandwich bread, cut off the ends and stir up a delicious cream cheese with finely grated lemon zest. This cream cheese can be used for both cucumber sandwiches and salmon sandwiches, where I simply add a little finely chopped dill to the cream for the salmon, so you can easily make two varieties of sandwiches with the same cream cheese. It's nice to have a small selection to choose from when serving these little delicate bites.

- 6 slices sandwich bread, thinly sliced
- 1 cucumber, thinly sliced
- ½ tsk salt
- Cream cheese cream
- 100 g natural cream cheese
- ½ organic lemon, finely grated zest
- 1 teaspoon lemon juice
- 1 tablespoon fresh dill
- salt and freshly ground pepper
Stir the cream cheese with freshly grated lemon zest, dill, a little lemon juice, salt and freshly ground pepper. Season well and place in the refrigerator until ready to spread on the bread.
Place the cucumber slices on a cutting board and sprinkle them with salt. Let them sit for fifteen minutes and then pat them well on both sides until they are completely dry.
Spread a thin layer of cream cheese dressing on the sandwich breads and place cucumber slices on half of the sandwich breads. Top with the other half of the bread slices.
Cut off the crusts and cut each square sandwich with a very sharp knife into 3 sticks or 4 triangles.
