Use your mushroom harvest to make a fragrant mixture. It's great on toast, with meat, and as a stock for the winter

Mushrooms are growing like wildfire this year and baskets are filling up with beautiful mushrooms. If you don't know what to do with your harvest, prepare a fragrant mushroom mixture. It is perfect for toast and toast, but it also complements meat.

When mushrooms are in abundance in the forest, it's a shame to stick to just frying or mushroom sauce. You can make a mixture of mushrooms, onions and green peppers that is perfect for a quick dinner or as a side dish for meat. But before you start cooking, pay attention to cleaning and cutting the mushrooms. Properly cleaned and cut mushrooms are the basis for a good result.

How to make a mushroom mixture not only for toast

Preparing the mushroom mixture for toast is not complicated, you just need to devote enough time to stewing the mushrooms and then cooking them.

  • For the mixture you will need
  • 1 kg of mixed mushrooms
  • 250 g of onion
  • 870 g of green pepper
  • 200 g of tomato paste
  • 200 ml of oil
  • 100 ml of vinegar
  • 70 g of sugar
  • 17 g of salt
  • Clean the mushrooms carefully and cut them into smaller pieces. Put them in a pot, add a little water and simmer for 5-10 minutes.
  • Drain off excess water. Add the remaining ingredients to the mushrooms and mix well.
  • While the mixture is still hot, pour it into clean, prepared jars. Carefully wipe the rims of the jars to remove any mixture residue, and seal the lids tightly. Then simmer for 1-1.5 hours. After simmering, let the jars cool and store in a cool, dark place.

Tip: Some of our readers have pointed out in their comments that it is not necessary to add water to mushrooms when stewing them. They contain enough water themselves and will gradually release it during cooking.

You can use a mushroom mixture as one of the options for processing this year's mushroom harvest. However, if you prefer traditional mushroom dishes, the greatest classic remains mushroom stir-fry. It is quick, simple, and fresh mushrooms play the main role in it.
