Pancakes made from yogurt and apple batter
Yogurt-apple pancake batter is easy to make from yogurt batter with grated apple. The fruit keeps them really soft, while vanilla sugar and lemon zest give them a pleasant aroma. These fragrant homemade pancakes can be served for breakfast, a snack, or as a sweet dinner.

- 200 g white unflavored yogurt
- 100 g semi-coarse flour
- 2 eggs
- 1 small apple
- 1/2 vanilla sugar
- 1/2 baking powder
- lemon zest (to taste)
- 1 pinch of salt

Method · 30 min
- Wash the apple, peel it, remove the core and grate it finely.
- Crack the eggs into a bowl, add vanilla sugar and a pinch of salt. Beat the mixture until foamy.
- Add the grated apple, yogurt and lemon zest. Mix briefly.
- Mix the semi-coarse flour with the baking powder and gradually incorporate it into the dough. Knead until you have a smooth dough without lumps.
- Heat a thin layer of oil in a pan.
- Spoon heaps of batter into the pan and spread them out lightly to form pancakes. Fry the pancakes over medium heat until golden brown on both sides.
- Place the fried pancakes on a plate lined with paper towels to absorb excess fat.
- Serve warm or cold.
