Pancakes made from yogurt and apple batter

Yogurt-apple pancake batter is easy to make from yogurt batter with grated apple. The fruit keeps them really soft, while vanilla sugar and lemon zest give them a pleasant aroma. These fragrant homemade pancakes can be served for breakfast, a snack, or as a sweet dinner.

Ingredients · Servings 1 dose
  • 200 g white unflavored yogurt
  • 100 g semi-coarse flour
  • 2 eggs
  • 1 small apple
  • 1/2 vanilla sugar
  • 1/2 baking powder
  • lemon zest (to taste)
  • 1 pinch of salt
  • Further:
  • frying oil
Method · 30 min
  1. Wash the apple, peel it, remove the core and grate it finely.
  2. Crack the eggs into a bowl, add vanilla sugar and a pinch of salt. Beat the mixture until foamy.
  3. Add the grated apple, yogurt and lemon zest. Mix briefly.
  4. Mix the semi-coarse flour with the baking powder and gradually incorporate it into the dough. Knead until you have a smooth dough without lumps.
  5. Heat a thin layer of oil in a pan.
  6. Spoon heaps of batter into the pan and spread them out lightly to form pancakes. Fry the pancakes over medium heat until golden brown on both sides.
  7. Place the fried pancakes on a plate lined with paper towels to absorb excess fat.
  8. Serve warm or cold.
