Pear cheesecake

Pear cheesecake

Ingredients · Servings 8 annosta
  • 250-300g haluamiasi keksejä (itsellä oli Kaurakas-vaniljatäytekeksejä)
  • 100g voita sulatettuna
  • 3tlk säilykepäärynöitä
  • 3rasiaa maustamatonta tuorejuustoa
  • 1dl sokeria
  • noin yhden sitruunan mehu (5-6 rkl)
  • 5 liivatelehteä
Method
  1. Laita liivatelehdet likoamaan kylmään veteen.
  2. Sulata voi. Hienonna keksit monitoimikoneessa tms.
  5. Kaada liivateneste massan joukkoon ohuena norona, koko ajan vispilällä sekoittaen. Sekoita hyvin sekaisin ja kaada seos irtopohjavuokaan. Tasoita pinta nuolijalla ja anna jähmettyä jääkaapissa yön yli. Koristele haluamallasi tavalla.

Soak the gelatin sheets in cold water.

Melt the butter. Crush the biscuits in a food processor or similar. Mix with the butter and pat evenly onto the bottom of a springform pan. Refrigerate.

Drain the canned pears. Puree them with a hand blender. Mix in the cream cheese, sugar and lemon juice.

For example, heat a little less than half a deciliter of water in the microwave until boiling hot and melt the gelatin (from which the soaking water has been squeezed out). You can also microwave the gelatin mixture for a few more seconds if it starts to solidify.

Pour the gelatin liquid into the mixture in a thin stream, stirring constantly with a whisk. Mix well and pour the mixture into a springform pan. Smooth the surface with a spatula and leave to set in the fridge overnight. Decorate as desired.
