Sponge cake without baking powder

Try this classic, delicious sponge cake made from pounded dough. Thanks to the addition of plenty of beaten egg whites to the dough, we don't need to use any baking powder, and the dough is still fluffy.

Ingredients · Servings 1 where
  • 6 eggs
  • 1 pinch of salt
  • 300 g caster sugar
  • 250 g butter
  • 200 ml milk
  • 350 g semi-coarse flour
  • cocoa (optional)
  • Further:
  • grease for wiping
  • flour for dusting
  • icing sugar
Method · 1 h 30 min
  1. Grease the mold and sprinkle with flour. Preheat the oven in time.
  2. Beat 5 egg whites and a pinch of salt until stiff peaks form.
  3. Beat 5 egg yolks, one whole egg and sugar until thick and light foam.
  4. Whisk in lukewarm milk and melted lukewarm butter.
  5. Then whisk in the flour in parts and finally carefully and lightly fold in the egg whites.
  6. You can color some of the dough with cocoa, it is not necessary.
  7. Pour the batter into the prepared pan and bake until the batter is done. Test with a skewer to see if it is dry and free of batter after removing it from the pan.
  8. Serve the cake after it has cooled, lightly sprinkled with powdered sugar.
