The best donuts I know

A reliable recipe for fried doughnuts filled with apricot jam is a popular classic. The detailed steps are easy to follow even for the less experienced. If you are worried about frying filled pastries, fry the doughnuts empty and fill them later.

Ingredients · Servings 1 dose
  • 50 g butter
  • 40 g powdered sugar
  • 4 egg yolks
  • 1 packet of vanilla sugar
  • 1 tablespoon lemon juice
  • 3 tablespoons rum
  • 250 ml milk
  • 1 teaspoon sugar
  • 30 g fresh yeast
  • 500 g plain flour
  • 1/2 teaspoon salt
  • Further:
  • plain flour (for rolling)
  • apricot jam (or other thick jam)
  • fat (for frying)
  • vanilla sugar (for sprinkling)
Method · 1 h 20 min
  1. All ingredients must be at room temperature. Take the butter out of the refrigerator in time to soften.
  2. Beat the softened butter with the sugar until foamy. Gradually stir in the egg yolks, vanilla sugar, and drop by drop the lemon juice and rum.
  3. Crumble the yeast into 100 ml of the measured amount of lukewarm milk, add a teaspoon of sugar, a tablespoon of flour and mix lightly. Cover the yeast with a napkin and leave in a warm place to rise for about 10 minutes.
  4. Pour the yeast into the yolk mixture, add the rest of the flour with salt and lukewarm milk. Knead a not too stiff dough, knead it, dust it with flour, cover and let it rise for about an hour.
  5. Turn the risen dough out onto a floured surface and roll it into a flat cake about 1 cm high.
  6. Using a 3–4 cm diameter cookie cutter, lightly mark out circles on half of the dough. Place a spoonful of jam in the center.
  7. Flip the second part of the dough over. Press the dough around the raised areas with your fingers to bring it together and cut out doughnuts with a cookie cutter. Let rise for 20 minutes. Turn the doughnuts upside down halfway through the rising time so that they rise evenly.
  8. Heat the fat and fry the doughnuts in it on medium heat. Not too quickly, first on one side under the lid, then uncover the lid, turn the doughnuts and fry until golden brown. There must be enough fat, the doughnuts must float in it.
  9. Let the fried donuts drain on a sieve and sprinkle them with vanilla sugar.
