Zucchini cake with cheese suitable for diabetics

What would summer be without zucchini, right? There are days when at least one of the dishes contains this green beauty. A quick dinner option that is also suitable for a diet is this savory pie with cheese, ham and oatmeal.

Ingredients · Servings 2
  • 1 medium zucchini
  • salt
  • ground pepper
  • garlic to taste
  • 3 eggs
  • 100 g mozzarella (or other cheese)
  • 4 tablespoons fine rolled oats
  • 70 g ham
Method · 1 h 10 min
  1. Grate the washed zucchini, including the skin, and add the grated cheese, finely chopped ham, and other ingredients.
  2. Mix well and let stand for 20 minutes.
  3. Line a cake tin with baking paper and pour the batter in. Place in a preheated oven and bake at 180°C for about 35 minutes, depending on the type of oven.
