Quick cake with apricots

A simple apricot cake is made from a quick, cast dough, topped with juicy apricots and sprinkled with chopped nuts or crumbs. Thanks to its easy preparation and soft dough, it is perfect with coffee, for summer gatherings, or as a sweet snack.

Ingredients · Servings 1 sheet
  • 350 g plain flour
  • 1 egg
  • 5 tablespoons caster sugar
  • 5 tablespoons melted butter
  • 15 tablespoons of milk
  • lemon peel
  • 1 baking powder
  • 1 pinch of salt
  • To finish:
  • apricots (to taste)
  • grated nuts for sprinkling (or crumbs)
  • grease for wiping the sheet metal
Method · 45 min
  1. Wash the apricots, halve them and remove the pits.
  2. Sift the plain flour into a large bowl and mix it with the baking powder and salt.
  3. Add the eggs, caster sugar, melted butter, milk and lemon zest. Mix until a smooth batter forms.
  4. Preheat the oven to 180 °C. Grease the baking sheet.
  5. Spread the dough evenly onto the prepared baking sheet.
  6. Cover the surface with apricot halves and sprinkle with chopped nuts or crumbs.
  7. Bake the cake in the preheated oven for about 25 minutes until golden brown.
  8. Let the finished cake cool and then serve.
