This crispy apple pie is fabulous! Made with just a few healthy ingredients, it's one of those desserts perfect for the whole family.

  • Ingredients
  • for the shortcrust pastry
  • a 125g stick of butter
  • 2 glasses + 5 tablespoons of cake flour
  • 1 egg
  • 5/6 cup granulated sugar
  • grated zest of an organic orange
  • a teaspoon of baking powder
  • for the filling
  • the filtered juice of half an organic lemon
  • a cup + a tablespoon of granulated sugar
  • 5 tablespoons of raisins
  • a sachet of vanilla
  • 600 g of yellow apples
  • a few spoonfuls of apricot jam

Crunchy apple pie, procedure

In a pan, cook the apples with the sugar and lemon juice for a few minutes until they wilt. After this time, mix the apples with the raisins and vanilla and let the filling rest. Meanwhile, in a bowl, mix the chopped butter and sugar, and flavor with the grated orange zest. Add the egg and baking powder to the sandy mixture and continue to work until the mixture resembles shortcrust pastry crumbs.

Transfer half of the crumb mixture to a buttered and floured 24 cm (9.5 in) pan and press it down to form a shortcrust pastry base. Cover it with a thin layer of jam before filling. Level the surface and cover it with the remaining crumb mixture. Bake at 180°C (350°F) for 30-40 minutes, or until golden brown.
