Potato soup with mushrooms
Potato soup with mushrooms is one of the most popular soups in Czech cuisine. The combination of potatoes, mushrooms, root vegetables and typical spices creates a rich and distinctive dish that will warm you up in any season. Although it is prepared from common ingredients, it manages to surprise with its fullness.
Ingredients · Servings 4
- 4 larger potatoes
- 2 handfuls of dried mushrooms
- 1 onion
- 50 g celery
- 1 parsley
- 1 carrot
- 1 cabbage
- 2 cloves of garlic
- 1 tablespoon plain flour
- broth (as needed)
- 1-2 teaspoons of soup seasoning
- 1.5 tablespoons butter (or lard)
- 1 teaspoon marjoram
- 1/2 teaspoon cumin
- lovage
- ground black pepper
- salt
- Further:
- parsley or chives (to finish)
Method · 1 h 5 min
- Soak the mushrooms in water beforehand.
- Peel and finely chop the onion. Clean and dice the vegetables. Peel and chop the garlic with a knife.
- Fry the chopped onion in butter (or lard) until pink. Sprinkle with plain flour and prepare a frying pan, stirring constantly.
- Pour the broth over the stew, mix thoroughly and let it simmer for approximately 20 minutes.
- Add all the chopped vegetables, drained mushrooms, soup seasoning, ground pepper, salt and lovage. Cook for another 10 minutes. Finally add the cumin, crushed garlic and marjoram.
- The finished soup can be sprinkled with freshly chopped parsley or chives on the plate.
