Zucchini meatballs

The zucchini harvest is in full swing, so any recipe to use up the abundant harvest of this vegetable will come in handy. Fried zucchini meatballs are completely meatless and the whole family will enjoy them. They can be served with boiled potatoes or on their own.

Ingredients · Servings 4
  • 2 larger zucchini
  • 4 tablespoons plain flour
  • 4 tablespoons of oatmeal
  • 2 eggs
  • 5 cloves of garlic
  • 1 teaspoon marjoram
  • salt (as needed)
  • ground pepper (as needed)
  • oil (for frying)
Method · 55 min
  1. Grate the zucchini on a fine grater, add salt and leave to sweat for half an hour. Drain and squeeze the zucchini so that it is not wet.
  2. Then drain the zucchini, squeeze it and put it in a bowl.
  3. Add flour, flakes and eggs to the mixture. Peel and crush the garlic, add marjoram, pepper and salt.
  4. Form the mixture into small, thin patties and fry in a pan in hot oil until golden brown.
  5. Place the fried patties on a paper towel to absorb excess fat.
