Hazelnut pastries, a favorite among those who love syrup-soaked desserts, can be prepared for many different occasions, from tea time to special dinner parties, thanks to their rich hazelnut filling and melt-in-your-mouth texture.

Ingredients · Servings 8
  • 100 grams of butter at room temperature
  • 2 eggs
  • Half a teacup of vegetable oil
  • 1 cup of finely ground hazelnuts
  • 4 tablespoons of semolina
  • 3 tablespoons powdered sugar
  • 2.5-3 cups of flour
  • 1 packet of baking powder
  • 1 packet of vanilla
  • 1 pinch of salt
  • 2 cups of powdered sugar
  • 2.5 cups of water
  • 1 teaspoon of lemon juice
  • 20-22 whole hazelnuts
  • You can use margarine instead of butter, or replace some of the butter with vegetable oil.
  • You can add a different nutty flavor to the dessert by using finely ground walnuts or almonds instead of ground hazelnuts.
  • By slightly increasing the amount of semolina, you can give the hazelnut pastries a more defined and slightly grainy texture.
  • You can use finely granulated sugar instead of powdered sugar.
  • Instead of vanilla powder, you can use vanilla extract or grated orange peel.
  • Instead of lemon juice, you can add a few thin slices of lemon to the syrup.
  • You can add a different flavor to the syrup by adding a small piece of cinnamon stick or orange peel.
  • Instead of whole hazelnuts, you can use almonds, walnuts, or pistachios.
  • You can intensify the nutty flavor by replacing some of the flour with almond flour or hazelnut flour.

  1. 1. First, prepare the syrup.
  2. 2. Combine the granulated sugar and water in a saucepan and stir until the sugar dissolves.
  3. 3. Once the mixture starts boiling, reduce the heat slightly and simmer for about 10 minutes.
  4. 4. Add the lemon juice and boil for another 2 minutes, then remove from heat and let it cool completely.
  5. 5. For the dough, mix room temperature butter, vegetable oil, eggs, and powdered sugar in a large bowl.
  6. 6. Add finely ground hazelnuts, semolina, vanilla, baking powder, and salt, and mix the ingredients together.
  7. 7. Gradually add the flour and knead until you have a soft, easily shaped dough that doesn't stick too much to your hands.
  8. 8. Break off pieces of dough slightly smaller than a walnut and roll them in your palms.
  9. 9. Place the prepared pieces in a lightly greased baking dish or one lined with parchment paper, leaving space between them.
  10. 10. Place one whole hazelnut in the center of each pastry and press gently.
  11. 11. Bake in a preheated 180 degree oven for about 20-25 minutes, or until lightly browned on top and bottom.
  12. 12. Let the desserts sit for 2-3 minutes after taking them out of the oven.
  13. 13. Slowly pour the completely cooled syrup over the warm hazelnut pastries.
  14. 14. Occasionally flip the pastries over or drizzle some of the syrup from the tray over them to ensure the syrup is absorbed evenly.
  15. 15. After letting them rest for about 2 hours, you can serve the hazelnut pastries.
