- Bring a large pot of water to a boil. Meanwhile, thoroughly wash the quinces to remove any fuzz from their skins. Then, plunge them whole into the boiling water for 10 minutes. This initial cooking softens their flesh and makes them easier to peel. Drain them carefully, then let them cool slightly before handling them to avoid burning yourself.
- Once the quinces have cooled sufficiently, peel them with a vegetable peeler or a small, sharp knife. Then cut them into quarters, carefully remove the core and any hard parts, and then chop the flesh into small, even pieces. The more uniform the size of the pieces, the more even the cooking will be, resulting in a smooth and delicious compote.
- Place the quince pieces in a saucepan large enough to allow for even cooking. Add the sugar, the vanilla pod split lengthwise, and 250 ml of water. Stir gently to distribute the ingredients evenly. This simple base preserves the delicate flavor of the quince while adding a fragrant sweetness.
- Place the saucepan over low heat and cook for about 20 minutes, uncovered, stirring occasionally to prevent the fruit from sticking to the bottom. The quince pieces should become very tender. Monitor the liquid level: it should remain moist enough to obtain a smooth compote, without becoming watery.
- Once the quince is cooked through, remove the vanilla pod. Then, mash the fruit with a fork directly in the pan until you obtain a compote-like consistency. You can leave some small chunks if you prefer a rustic texture, or mash more for a smoother result. Mix well to combine before serving.
- Let the compote cool slightly or completely, depending on your preference. You can enjoy it as is for dessert, use it to fill a tart, or serve it alongside foie gras for a refined sweet and savory touch. Divide it into small bowls or store it in an airtight container in the refrigerator for a few days.
