Homemade meringues, crisp and light as a cloud

- Preheat the oven to 100°C (210°F) to ensure gentle and even baking, essential for achieving meringues that are dry, crisp on the outside, and light in the center. Line a baking sheet with parchment paper. Also prepare a large, perfectly clean and dry mixing bowl, as even the slightest trace of grease can prevent the egg whites from whipping properly.
- Pour the egg whites into the mixing bowl, add the two pinches of fine salt and the teaspoon of lemon juice. Whisk with an electric mixer at medium speed, then increase the speed until stiff peaks form. The mixture should become white, foamy, and form firm peaks when you lift the beaters.
- Add the caster sugar gradually, whisking continuously, until it dissolves completely in the whipped egg whites. Take your time: this step is crucial to the final texture of the meringues. Continue whisking until you obtain a dense, glossy, and smooth mixture that holds its shape well in the bowl without deflating.
- Transfer the mixture to a piping bag if you want uniform, neatly shaped meringues. Then, pipe small, spaced-out mounds onto a baking sheet lined with parchment paper. If you don't have a piping bag, simply drop spoonfuls of the mixture onto the baking sheet. Make sure they are all roughly the same size to ensure even baking.
- Place the baking sheet in the preheated oven and bake the meringues for about 2 hours at a low temperature. They should dry slowly rather than actually cook. Avoid increasing the heat, as this will cause them to brown. When done, the meringues should easily peel off the parchment paper and feel dry to the touch.
- Remove the meringues from the oven when they are completely dry, then let them cool completely at room temperature on the baking sheet or a wire rack. This allows their texture to stabilize. Once cool, enjoy them as is, serve them with coffee, or use them to create a delicious and elegant dessert.
