Here is my recipe for bacon rolls in a potato dish with vegetables, which is packed with flavor, spices and lovely vegetables. Perfect for a cozy weekend dinner, but also on weekdays, where it mostly takes care of itself in the oven before being served.
You can serve a simple green salad, I think it makes it extra delicious and adds a bit of fresh crunch. But since there are plenty of greens in the dish, it's not strictly a must. It's so nice and easy with 'all in one dish' meals, and the little bacon rolls are a hit with both children and adults.

Sauté leeks in a pan with oil until they fall apart easily, but without taking on color. Add sun-dried tomatoes, squash, rosemary, spinach, vegetable stock and whipping cream to the pan and stir well until the spinach falls apart. Let it simmer for 5 minutes and season with salt and pepper. Alternately place a layer of potatoes and a thin layer of the vegetable-cream mixture in a greased ovenproof dish. Bake in a preheated oven at 180 degrees hot air for about 25 minutes. Working time 30 min. Number 4 people. Would you like a picture on the printout?
