Sweet potato fries from the oven: Here's how to make them!
How do you make sweet potato fries crispy?
- 2 sweet potatoes
- 3 tablespoons olive oil
- Salt
- Peel the sweet potatoes and cut them into thin sticks. Place them on a baking sheet lined with parchment paper and drizzle with oil. Season with salt. Mix well and spread the sweet potato fries out on the baking sheet, leaving space between them.
- Bake sweet potatoes in a preheated oven at 200°C (390°F) for about 20 minutes, or until crispy. Remove from the oven and serve immediately.
Soak the sliced sweet potatoes in water for about 30 minutes. This removes starch from the potatoes, making them crispier when baked. Then pat the fries dry and proceed as described in the recipe.
Another tip is to add 2 tablespoons of starch (for 2 sweet potatoes). Mix this into the fries along with the oil before baking. Alternatively, you can use cornmeal. This also makes the sweet potato fries crispier.
Recipe for sweet potato fries from the deep fryer
1. Peel the sweet potatoes and cut them into sticks (max. 1 cm diameter).
2. Soak raw sweet potato fries in water for at least one hour.
3. Remove from the water and dry with kitchen paper.
4. Place the fries in a freezer bag with the starch (about 1 tbsp per sweet potato) and shake until they are evenly coated.
5. Place in the deep fryer for about 5 minutes at 130 degrees (important: do not fry too many at once, the sweet potato fries must float freely in the fat).
6. Carefully remove from the oil and let cool on kitchen paper for 10-15 minutes.
7. Fry the fries for about 4 minutes at 175 degrees until they are golden brown and crispy.
8. Drain on kitchen paper, add salt and season to taste, e.g. with rosemary, thyme or pepper.

Can sweet potato fries be prepared in advance?
Sweet potato fries can be prepared in advance: Peel the potatoes and cut them into sticks as described in the recipe. You can store the prepared sweet potato sticks in an airtight container in the refrigerator for up to three days before baking them as described.
Alternatively, the prepared sticks can also be frozen: Place them on a baking sheet, leaving space between them. Freeze the sweet potato sticks on the baking sheet in the freezer for 2 hours. After that, you can transfer them to a suitable container, refreeze them, and store them this way for up to six months. When needed, thaw the sweet potato sticks, toss them with oil and salt, and bake them until crispy.
