This cream lends itself to endless variations. It can be the centerpiece of a cake, the filling for cream puffs or sfogliatelle, the base for a fruit salad, or simply a dessert to be enjoyed with a spoon. The chocolate version is among the most popular: just add some bitter cocoa to the batter and you're done. And for those who are daring, you can flavor it with lemon zest, vanilla, coffee, or liqueurs. Ingredients for the basic custard:
- 500 ml of whole milk
- 80 g of granulated sugar
- 40 g of corn starch (maizena)
- 20 g of 00 flour
- 1 vanilla pod (or lemon zest)
- 20 g of bitter cocoa powder (to be added to the basic ingredients)
Preparation of the custard
In a small saucepan, heat the milk and the vanilla bean, scraped with the seeds. In a separate bowl, combine the sugar, cornstarch, and flour. When the milk is warm but not boiling, remove the vanilla pod and pour a ladleful into the bowl with the dry ingredients, stirring with a whisk to avoid lumps. Transfer everything to the saucepan and return to the heat over low heat.
Stir constantly until the cream thickens, usually taking two or three minutes. If making the chocolate version, sift the cocoa powder with the rest of the ingredients at the beginning. Once ready, pour it into a shallow bowl, cover with plastic wrap, and let it cool. The eggless cream is ready to serve immediately or store in the refrigerator for a couple of days.
