Delicious Fish Cob Curry Rice, Special & Easy Recipe to Try
Nasi Dagang Gulai Ikan Tongkol is really delicious. This famous dish from the East Coast state is always a crowd favorite. However, if you live in states outside of Kelantan, Terengganu and Pahang, it is quite difficult to find the ingredients to cook this dish. Unless you order it through an online store.
Sister Hajar Mohd has shared a recipe for cooking delicious nasi dagang using a mixture of Jati rice and glutinous rice. It is an option for those of you who have difficulty getting nasi dagang rice or fragrant rice. Well…you can try it later.
Interestingly, this recipe is not only complete with how to prepare rice, but also includes a recipe for Tongkol Fish Gulai and pickles. It's a complete meal. So if you want to enjoy East Coast-style dishes at home, you can try this method.
How to Cook Delicious Rice with Tongkol Fish Curry
To prepare this dish, start by cooking the rice first. Using a mixture of Jati rice and glutinous rice is an alternative if special rice for nasi dagang is difficult to obtain.
Commercial Rice Ingredients
- 4 cups of Jati rice (if available, you can use fragrant rice @ nasi dagang rice) – buy online here
- 1 cup of glutinous rice (if using fragrant rice @ nasi dagang rice, no need to add glutinous rice) – buy online here
- 3 cups of liquid coconut milk mixed with a little sugar and salt
- 2 cloves of red onion – sliced
- ½ inch ginger – sliced
- 1 tablespoon halba – buy online here
- 1 @ 1 1/2 cups thick coconut milk mixed with a little salt
How to Cook Rice
- Combine the rice and glutinous rice. Clean.
- Soak for 8 hours or 4 hours or 2 hours. Then wash, drain and steam for 20 minutes.
- Just steam the first 20 minutes, remove and transfer the rice to a basin.
- Mix with liquid coconut milk that has been mixed with a little sugar and salt. Let it soak in well. Leave for a while.
- Then add the sliced shallots, ginger and fenugreek.
- Steam a second time for 20 minutes.
- Simply steam for 20 minutes a second time, remove and transfer to a basin. Stir (stir) with thick coconut milk mixed with a little salt. Done.
The process of steaming the rice twice and mixing it with the coconut milk is an important part of this recipe. Make sure the coconut milk is mixed with the rice evenly so that the flavor can penetrate well.
Rice Cob Fish Curry Recipe
Now that the rice is ready, let's prepare the Tongkol Fish Gulai. This side dish completes the Tongkol Fish Gulai Nasi Dagang and gives it a very appetizing taste when enjoyed with pickles.
Ingredients for Skipjack Tuna Curry
- 1 kg of tuna
- Salt
- Asam kepek
- A little gula melaka @ gula nisan – buy online here.
- 250ml coconut milk
- 1.5 liter air
- 1 tablespoon of ground dried chilies – buy online here
- 1 packet of nasi dagang spices (if you don't have any, just use cap ros spices @ regular curry spices) – buy online here
- A few green & red chilies.
Blended Ingredients
- 2 large onions – buy online here
- 2 cloves of garlic – buy online here
- 1/2 inch ginger – buy online here
- 1/2 inch galangal
How to Cook Skipjack Tuna Curry
- Clean the cod fish, cut it into pieces and boil it with salt and tamarind pulp to remove the fishiness. You can add a little sugar cane @ sugar cane. Boil until the fish is cooked and firm.
- Add the coconut milk and the blended ingredients into the pan. Turn on the stove.
- Immediately add the rice gulai spice. If you don't have this spice, you can use rosehip spice or regular curry spice. Stir briefly.
- Add the previously boiled tuna.
- This fish is already sour enough so there is no need to add more sour to the sauce. Cook until it boils but be careful not to let the coconut milk break into oil.
- Heat another pan, stir-fry the ground chili with oil. Cook until golden brown.
- Enter the gravestone sugar.
- When the chilies are a beautiful color, add them to the curry sauce. Turn off the heat.
- Tuna Fish Curry @ Nasi Perdagangan Curry is ready to be served.
Pickle Recipe to Complement Nasi Dagang
If you have rice and curry, pickles are a great complement to the dish. Their sour, sweet and fresh taste is perfect to enjoy with rice and the rich curry sauce.
Pickle Ingredients
- 2 cloves of shallot – buy online here
- A little ginger (optional)
- Carrot – sliced
- Cucumber – sliced
How to Make Pickles
- Slice the ingredients that need to be sliced and place them in a suitable container.
- Mash the shallots and ginger. Put them in the container.
- Add salt and sugar to taste.
- Add the vinegar as well. Mix well.
- Serve with Nasi Dagang and Tongkol Fish Curry.
Tips for Making Tuna Fish Curry Rice
If using Jati rice as in this recipe, the glutinous rice mixture helps to give the right texture. But as the recipe owner explains, if you are already using fragrant rice or nasi dagang rice, there is no need to add glutinous rice.
Don't forget to soak the rice before steaming. After the first steaming, the rice is mixed with liquid coconut milk before being put back into the steamer. After the second steaming, the rice is coated with thick coconut milk.
For the curry, the cod fish is first boiled with salt and asam keping. Apart from helping to remove the fishiness, this process ensures that the fish is cooked and firm before being added to the gravy.
When cooking coconut milk gravy, you must always pay attention to the heat. As stated in the original recipe, cook until boiling but do not let the coconut milk separate from the oil.
Don't Forget the Pickles
This simple pickle is not to be missed. Cucumbers, carrots and chillies provide a crunchy and fresh texture, while a mix of vinegar, sugar and salt provides a sweet and sour flavour that completes the dish.
When everything is ready, serve the rice with Tongkol Fish Gulai and pickles. It's a complete meal. Although it's difficult to get nasi dagang rice in some places, using Jati rice with glutinous rice as shared in this recipe can be an option.
