How to Prepare Walnuts for Walnut Baklava?
In baklava making, walnuts are not only a part of the filling, but also one of the key ingredients that determine the overall aroma of the dessert. The first thing to pay attention to during preparation is ensuring the walnuts used are not stale, damp, or bitter.

Choose Fresh and High-Quality Walnuts: The walnuts used for baklava should primarily be fresh and fragrant. Before using the walnuts, remove any that are darkened, moldy, or bitter. If the walnuts are noticeably bitter, it's best not to use them in the baklava filling. Fresh walnuts retain their natural oils and unique aroma better. It's also important to ensure the walnuts are not damp, especially since they will be used in desserts.

Crush the Walnuts into Large Pieces: When preparing walnuts for baklava, it's better to break them into large to medium-sized pieces instead of grinding them into a powder. A knife, mortar and pestle, or food processor can be used for this. If using a food processor, avoid grinding the walnuts for too long. Over-grinding can release excess oil and create a denser texture in the baklava than desired.
