It is best to consume within 2-3 months. Unbaked pastry dough can be stored in the freezer under suitable conditions for approximately 2-3 months. During this time, the flavor and texture of the dough are largely preserved. If stored for longer periods, the rising performance may decrease, especially in yeast doughs. A freezer temperature of approximately -18 degrees Celsius is ideal for storage. For best results, it is necessary to freeze the pastries as fresh as possible.

Airtight Packaging Should Be Used: When placing pastries in the freezer, airtight freezer bags or suitable storage containers should be used. Leaving too much air inside the packaging can cause the dough to freeze and become icy and dry. The pastries can first be frozen on a baking sheet without touching each other. After they harden, they can be portioned and bagged to save space. Writing the freezing date on the packaging makes it easier to track how long they have been in the freezer.

Storage Time for Yeast-Based Pastries: While yeast dough doesn't completely lose its activity when frozen, it can weaken over time. Therefore, it's not recommended to keep yeast-based pastries in the freezer for extended periods. Storage exceeding 2-3 months, in particular, may result in less rising after baking. For doughs containing yogurt, milk, or eggs, consuming them sooner is also advantageous in terms of freshness. Freezing the pastries on the day you prepare them helps preserve their freshness better.
