Pistachio cookies: recipe with egg yolks

Ingredients · Servings 3
  • 1 egg yolk
  • 50g of powdered sugar
  • 50g of flour (wholemeal rice flour)
  • 40g of butter
  • 50g of almond or hazelnut powder (half almond powder, half pistachio powder)
Method · 30 min
  1. Work the egg yolk with the sugar. Add the softened butter, flour and almonds.
  2. If you are using pistachios: grind pistachios (unsalted) in your mini electric herb grinder.
  3. Place small mounds on the greased baking sheet and bake in the oven for about ten minutes.
  4. You can also add crushed squares of chocolate to the mixture and bake in madeleine molds.
