Oatmeal burger with beetroot and walnuts

Beetroot is rich in iron and folic acid, the perfect combination for healthy blood formation. Furthermore, it has anti-inflammatory properties thanks to plant compounds like betanin, phenolic acids, and saponins.

Ingredients · Servings 4
  • 120 g fine rolled oats
  • 80 g coarse rolled oats
  • 4 tablespoons of ground flaxseed
  • 2 beetroots (vacuum-packed)
  • 360 ml beetroot juice
  • 2 red onions
  • 2 cloves of garlic
  • 3 tablespoons rapeseed oil
  • 2 tsp Senfsamen
  • 2 tsp coriander seeds
  • 4 tsp sweet paprika powder
  • 200 ml vegetable broth
  • 6 tbsp soy sauce
  • 2 handfuls of arugula
  • 2. Margarine (vegan)
  • 3 tsp spelt flour type 1050
  • 5 tbsp yeast flakes
  • 1 tsp mustard
  • Salt

  • 20 g walnut kernel halves
Method · 40 min
  1. Mix the rolled oats and flax seeds in a bowl. Drain the beets, reserving the juice, and add the reserved juice to make a total of 360 ml. Peel the onion and garlic. Finely dice one onion and the garlic, and slice the other onion into rings and set aside.
  2. Sauté diced onion and garlic in a pan with 1 tablespoon of oil. Crush seeds in a mortar and pestle and sprinkle them over the onion along with paprika powder. Sauté briefly, then deglaze with vegetable broth, beetroot juice, and soy sauce. Simmer briefly, pour over the rolled oats, and let them soak for 10 minutes.
  3. Meanwhile, slice the beetroot thinly. Clean, wash, and shake dry the arugula.
  4. Melt the margarine in a saucepan, whisk in the flour, and deglaze with 120 ml of water. Stir in the nutritional yeast, mustard, salt, pepper, and turmeric, and bring to a boil. Simmer until a thick cream has formed.
  5. Form 4 patties from the oat mixture and bake in a coated pan with the remaining oil for about 4 minutes over medium heat, turn over and finish baking.
  6. Meanwhile, toast the burger buns, spread half of the yeast mixture on them, top with beetroot, onion rings and arugula, drizzle a little maple syrup over the salad, then place the oat patties on top, spread with the remaining yeast mixture, sprinkle with walnuts and put on the burger top.

You can also serve the oat patties with a salad or roasted vegetables and a quark and herb dip. The nutritional yeast is also very versatile; try it, for example, on a vegan pizza as an alternative to cheese, or use it to top a casserole.
