Processing the harvest is an integral part of every autumn. Prepare delicious stewed pears that will be a welcome addition to your diet during the winter months. Thanks to the simple process, anyone can do it.
Have you harvested a large quantity of pears, or have you been gifted them? Don't leave anything to chance, thanks to sterilization you can enjoy their excellent taste even out of season. Among other options, pears cooked in the form of a basic compote are also worth trying.
How to easily preserve pears
For one batch of the simplest stewed pears, you will need firm pears, water, granulated sugar, and citric acid as needed.
- First, boil the brine – add 400 g of sugar to 1 liter of water. After boiling, let it cool completely.
- You can (but don't have to) peel the pears, then wash them and cut them into quarters.
- Cut the core out of the center of the fruit and place the prepared pieces in a bowl with cold water and about 1 teaspoon of citric acid to prevent them from browning.
- Place the pears in pre-prepared preserving jars (do not crush them) and pour over the prepared cooled brine. After filling, carefully wipe the necks of the jars dry, tightly close the lids and preserve at 85 °C for 20–25 minutes.
Tip: If you like a stronger taste of preserves, don't be afraid to add cloves, cinnamon, and star anise to the brine, which will provide a more intense taste and aroma of the compote. An interesting combination is to add rowanberries, blackberries, or plums.
