Wraps with cottage cheese and peaches
Cottage cheese and peach wraps are made from yeast dough, filled with a sweet cottage cheese filling and a piece of peach. Fold the dough into a wrap shape, bake until golden brown, and sprinkle with sugar after cooling. The result is a soft dessert that is perfect for coffee or as a sweet snack.

- Dough:
- 250 g spelt flour
- 250 g semi-coarse flour
- 3 eggs
- 100 g caster sugar
- 1 lemon sugar with lemon zest
- 7 g dried yeast
- 200 ml semi-skimmed milk (lukewarm)
- 100 g melted butter
- 1 pinch of salt
- flour for sprinkling
- Filling:
- 500 g soft cottage cheese (cubed)
- 100 g caster sugar
- 1 vanilla sugar
- 1 lemon sugar with lemon zest
- 2 tablespoons lemon juice
- 1 egg
- peach compote (to taste)
- To finish:
- powdered sugar for sprinkling
Method · 55 min
- Sift both flours into a bowl, add salt, sugar, lemon sugar and dried yeast and mix.
- Beat 2 eggs in lukewarm milk and add to the flour mixture. Add the melted and cooled butter and knead into a soft dough.
- Cover the dough and let it rise for about 60 minutes. Then punch it down lightly and let it rise for about 30 more minutes.
- Mix the cottage cheese with caster sugar, vanilla sugar, lemon sugar, lemon juice and egg.
- Drain the peaches and let them drain, then cut into larger pieces.
- Roll out the risen dough on a floured rolling pin into a sheet about 1 cm thick.
- Cut it into squares and let them rest for about 10 minutes.
- Place a spoonful of filling and a piece of peach in the center of each square.
- Fold the opposite corners of the dough over each other and press lightly.
- Place the wraps on a baking sheet lined with baking paper.
- Preheat the oven to 180 °C.
- Beat the remaining egg and brush the wraps with it.
- Bake for about 15 minutes until golden brown.
- After baking, let it cool and sprinkle with sugar.
