Ingredients for about 20 puff pastries

For the dough

  • 120 ml of milk
  • 100 g of butter
  • 6 g of salt
  • 16 g of sugar

  • 1 orange, the peel of which is grated

For the filling

500 ml of sweetened whipping cream 1 orange

Preparation of Orange and Cream Puff Pastries

To make this recipe, first melt the butter in a saucepan. Once melted, add the flour, stirring quickly until the mixture separates from the bowl and sticks to the ladle. Remove the saucepan from the heat and add the beaten eggs, sugar, and salt. Once fully incorporated, transfer the mixture to a piping bag and pipe small disks onto a baking sheet lined with parchment paper. Using a finger dipped in water, flatten the tips of each disk and create a small dollop to top each disk.

Bake the pastries in a preheated oven at 220°C (425°F) in fan-assisted mode for 15 minutes. After this time, lower the temperature to 180°C (350°F) and bake for another 20-25 minutes. Once baked, let cool completely.

Meanwhile, whip the sweetened cream until stiff peaks form, along with the grated orange zest. Then, chop the orange zest into small pieces and set aside.
