Apple cinnamon quinoa
The pseudocereal quinoa is ideal for vegetarians because it contains iron and protein, both of which are often lacking in a vegetarian diet. Iron is essential for blood formation and oxygen transport in the body. We need protein for strong muscles and as a building block for hormones, cells, and neurotransmitters.

- 125 g Quinoa (bulk)
- 250 ml almond drink (almond milk)
- 1 tsp cinnamon
- 1 large apple
- 1 handful of nuts (walnuts, almonds, hazelnuts)
Method · 25 min
- Rinse the quinoa in a sieve under hot water. Then bring to a boil with almond milk and cinnamon. Cover and simmer over low heat for about 15 minutes.
- Clean, wash, and chop the apple. Then lightly fry one piece in a pan with 2-3 tablespoons of water. Roughly chop the nuts.
- Arrange the apple-cinnamon quinoa in a bowl and sprinkle with nuts.
For a creamier apple-cinnamon quinoa, you can stir in some almond milk at the end.
Incidentally, there are countless variations of this quinoa breakfast, as you can replace the almond milk with regular milk or another milk alternative. The apple can also be substituted with seasonal fruit. And instead of cinnamon, you can use other spices. For example, try a strawberry-vanilla quinoa made with cow's milk in early summer.
