My soft biscuits are a delight, I prepare them without flour and without butter

For a snack, let's make these super soft, delicious biscuits together, made without flour or sugar.

I make them when I have last-minute guests for a snack. I love them because when they arrive, the house always smells of cookies, but with a different fragrance than the one we all know.

In fact, these cookies are made without flour, with just a few ingredients, and most importantly, without butter—a small detail that makes them moderately caloric and perfect for any occasion. Take notes and save this recipe to show off at any occasion.

Super soft biscuits without flour and butter

This is a recipe I stole from my mom's cookbook; she always made them when she had guests over for tea, or when she wanted to treat my sisters and me. In a way, I've decided to continue the tradition, but with a twist, because I thought it would be a good idea to share my recipe with you. Here are the ingredients we'll need:

300 grams of almond flour, 110 grams of powdered sugar, the whites of two eggs, 15 grams of honey, lemon zest.

Here's how I prepare my biscuits

Let's start preparing our cookies by taking the zest from a lemon and immediately mixing it with the almond flour and powdered sugar. Then, take the egg whites and honey and add them to the mixture.

Then, we begin to work everything together with our hands until we obtain a smooth and compact dough. Let it rest for 5 minutes and then, in another bowl, add more sugar and get to work.

With the resulting dough, shape it into balls of about 30 grams each, dip them in powdered sugar, and place them on a baking sheet lined with parchment paper. Bake them at 170 degrees Celsius (340 degrees Fahrenheit) for about 12 minutes, and that's it! Let them cool completely before serving. Store any leftovers in an aluminum container, where they'll retain their fragrance and softness.
