Frozen physalis
I'm continuing to share how to preserve physalis for the winter. I recently made a delicious jam with pineapple and strawberry flavors, as well as a very light and pleasant compote. To preserve physalis without cooking it, you need to freeze it.
For freezing you will need ripe strawberry physalis and sugar.
Remove the dry capsules from the physalis.
Rinse the berries in hot water.
Place in a colander to drain off excess water.
Place half of the physalis in a blender. Add sugar to taste. Since the berries are ripe and very sweet, I only use 1 tablespoon of sugar.
Using a metal knife attachment, chop the physalis until smooth.
Place the remaining berries in a bowl and add sugar.
Lightly crush the berries with a wooden pestle.
Place the puree in small plastic containers. Add several whole physalis berries to the container with the puree. Seal the containers with lids and place them in the freezer.
This method allows you to freeze physalis for the winter, preserving its vitamins.
